Grilled Halloumi and Lentil Salad

Ingredients

  • 3 slices of grilled halloumi
  • 3 tbsp of puy lentils
  • 1/2 yellow bell pepper
  • 4 cherry tomatoes
  • 3 tbsp of purple cabbage
  • 1 cup of spinach
  • Handful of alfalfa
  • 1/2 avocado
  • 1/4 clove of garlic
  • 1 tbsp of sunflower seeds
  • 1 tsp of lime juice
  • 1 tbsp of water
  • Handful of fresh coriander
  • Handful of fresh parsley

Instructions

  1. Start by grilling the halloumi in the oven for 10 minutes until the halloumi changes colour. Don’t forget to flip them over halfway and keep checking
  2. Then boil the puy lentils according to the instructions on the packet
  3. Then it’s time to make the avocado dressing. Add the avocado, garlic, coriander, lime juice and water into a food processor and whiz until you have a smooth texture
  4. In a bowl add the spinach, peppers, purple cabbage, cherry tomatoes, alfalfa, grilled halloumi and puy lentils
  5. Top with the avocado dressing, sunflower seeds and fresh parsley
  6. Then serve and enjoy!
